We took our favorite things about salsa and combined it all into one!

Ingredients
  • 9 each Roma Tomato
  • 2 each Onion yellow, medium size
  • 2 each Jalapeno Peppers
  • 1/2 cup Chopped Cilantro
  • 4 tbsp Dude's Masterblend Seasoning
  • 1/8 tsp Salt
Instructions
  1. Prepare and light charcoal grill

  2. Wash all vegetables and cut the ends and skin from the onions (leave them whole),

  3. Add mesquite and hickory chunks to the charcoal grill. Place onions, jalapenos, and tomatoes on the grill and give them a good char!

  4. Pull off the grill when they look like this.

  5. Combine all ingredients in the food processor. NOTE: for medium salsa, only use the seeds from one of the Jalapeno peppers. For hot, use all of the seeds.

  6. And here you go!

Ingredients
  • 2 oz Bulleit Kentucky Bourbon
  • 4-5 oz Jimmy Luv's Bloody Mary Mix
  • 4 dash Dude's Masterblend Seasoning (heavy dashes)
  • 2 dash Worcestershire Sauce
  • 1 dash A1 Sauce
  • 2 dash Frank's Red Hot
  • 2 dash Black Pepper
  • 1 tbsp Olive Juice
  • 1 dash Celery Salt
  • 1 each Garnish
Instructions
  1. Mix in any order and serve over ice. It's that easy!

Philly Cheesesteak Dude's Masterblend Style

A really nice twist on the classic Philly. We didn't even need the cheese!

Ingredients
  • 3 each New York Strip Steaks Thick Cut
  • 2 each Green Pepper
  • 2 each Onion
  • 2-6 tsp Dude's Masterblend Seasoning
  • 4 tbsp Cooking Oil
  • 1 package Hoagie Rolls
  • Butter
Instructions
  1. Light grill and maintain medium to high heat.

  2. Cut onion and green peppers into slices.

  3. Butter and toast the hoagie rolls.

  4. Grill steaks until nicely seared on the outside. Note: Steaks do not need to be cooked to any certain temperature as we are only looking for the smoky, charcoal flavor from the grill.

  5. Remove steaks, trim away fat, and slice into thin strips. Set aside.

  6. Heat a cast iron dutch oven and add 2 tbsp cooking oil. When sufficiently hot, add the onion and green pepper mixture. Additional oil may be needed during cooking.

  7. When onions and peppers are cooked, transfer to a covered dish to keep warm.

  8. Place the thin steak strips in the dutch oven. Add 1 tbsp of cooking oil, and then add Dude's Masterblend seasoning (2-6 teaspoons to taste). STIR OFTEN and QUICKLY. The steak will cook very fast.

  9. Place steak and onion/green pepper mixture on a hoagie and enjoy!

 

 

Italian Beef

Wonderful Italian beef recipe perfected over the past 10 years.

Ingredients
  • 3-4 pound Angus chuck roast
  • 1 lg jar Mild pepperocini
  • 1 sm jar Mild banana pepper rings
  • 4 each Onions
  • 1/2 bottle Beer
  • 1 package French onion soup mix
  • 4 tbsp Dude's Masterblend seasoning
  • 2 tbsp Beef bullion concentrate
  • Water
Instructions
  1. Remove stems and seeds from pepperocini. Cut onions into wedges. Place into bottom of slow cooker.

  2. Place roast in slow cooker, followed by banana pepper rings, beer, bullion concentrate, Dude's Masterblend seasoning, and French onion soup mix.

  3. Add sufficient water.

  4. Cook on medium to high all day. Serve after minimum 5-6 hour cook time, when meat shreds easily.. 

 

 

Grilled Steaks

Dude's Masterblend is an excellent choice for grilling steaks.

  • 1 tsp Dude's Masterblend
  • 1/4 tsp Coarse Salt (Kosher salt is also acceptable)
Instructions
  1. Sprinkle Dude's Masterblend and coarse salt (to taste) on each side of the steaks. For larger steaks, be sure to cover the sides and ends as well. 

  2. Grill over medium to high charcoal heat to preference. 

  3. Allow to rest for 5 minutes before cutting.

Recipe Notes

Dude's Masterblend contains a minimal amount of salt. For some dishes, steaks included, additional salt (coarse salt in this recipe) may be added to taste.

 

 

Smoked Sausage

Ingredients
  • 1 pound Smoked Sausage Natural casing or skinless
  • 1 each Sweet Onion
  • 2 each Green Pepper
  • 1 tbsp Dude's Masterblend
  • 2 tbsp Butter, Canola, or Vegetable Oil
  • 1 package Hot Dog Buns
Instructions
  1. Prepare grill (medium heat) or smoker (275-300 degrees)

  2. Wash and cut onions and green peppers.

  3. Sprinkle smoked sausage with Dude's Masterblend.

  4. Grill sausage, remove when done, and place in foil to keep hot. If cooking on a smoker, allow approximately 1-1&1/2 hours for cooking to be completed. Note: Do not smoke for too long as the outer natural casing will become difficult to chew. Place in foil when completed.

  5. Add butter, canola, or vegetable oil to frying pan and heat.

  6. Add onions first, then add peppers when the onions become translucent. Continue cooking until peppers are crispy, yet cooked.

  7. Place sausage, then onion/pepper mixture on a bun and enjoy!

  • 1 cup Flour
  • 2 each Egg
  • 1/2 box Panko breadcrumbs
  • Freshwater fish
  • 1 tbsp Dude's Masterblend Seasoning
Instructions
  1. Prepare egg wash by whipping eggs in a small bowl.

  2. Coat preferred freshwater fish with flour.

  3. Dip in egg wash.

  4. Dip in Panko Crumbs

  5. Deep fry to perfection

  6. Season to taste with Dude's Masterblend seasoning.

Baby Back Ribs

There's nothing better than a high-quality dry rub on a slab of baby back ribs. We've cooked and served hundreds of slabs over the years and Dude's Masterblend is now available commercially for everyone!

Ingredients
  • 1 slab Baby Back Ribs
  • 2 tbsp Dude's Masterblend
  • 1 pint Apple Juice
  • 1/2 cup Barbecue Sauce (if wet ribs are preferred)
Instructions
  1. Prepare smoker (or grill set to indirect heat) to 225-250 degrees. 

  2. Remove the membrane from the back side of the ribs. 

  3. Cover entire surface of ribs (both sides) with a generous amount of Dude's Masterblend. 

  4. Place on smoker and maintain temperature for approximately 3 hours. Check on ribs, rotate if necessary, and spray with apple juice. Repeat once hourly for next 2-3 hours, depending on the cooking rate of the ribs. Note: When you can pick up the ribs in the middle, and the hanging side droops but does not break or separate, you are 45 minutes to an hour from completion. For those that like ribs with sauce, a single layer may be placed on both sides, lightly sprinkle with additional Dude's Masterblend at this time. 

  5. Remove from smoker when cooking completed. Slice and serve.

  • 1 package Chicken thighs Approximately 8
  • 1 can Cooking spray
  • 1-3 tsp Dude's Masterblend seasoning
  • 1/8 tsp Salt "Just a pinch"

  1. Preheat oven to 350 degrees

  2. Cover baking sheet with foil to catch juices. Spray with cooking spray.

  3. Place chicken thighs on sheet. Apply generous amount of Dude's Masterblend seasoning and just a pinch of extra salt.

  4. Bake on center rack for 1 hour. Check temperature near bone, should be 165 or over.

  5. Remove from oven and serve with sides of your choice.

Ingredients
  • 1-6 servings Instant Rice
  • 1-6 servings Vegetables (carrots, broccoli, mushrooms, water chestnuts, etc.)
  • 2 tbsp Dude's Masterblend
  • 1 each NY Strip Steak (1/2-3/4" thick)
  • 1 Package Chicken Tenders (raw)
  • 1/4 cup Canola or Vegetable Oil
  • 1/8-1/4 cup Teriyaki or Soy Sauce
Instructions
  1. Light charcoal and adjust for medium heat.

  2. Wash and cut vegetables.

  3. Sprinkle Dude's Masterblend on the Steak and Chicken.

  4. Quickly grill steak and chicken on open grill. Note: Do not cook steak to final serving temperature as cooking will continue later. Chicken must be cooked to final temperature.

  5. Add hickory chucks or logs to fire and allow the fire to grow.

  6. Prepare instant rice

  7. Slice steak and chicken

  8. When fire is ready, heat wok (one without wooden or plastic handles) with vegetable or canola oil. 

  9. When wok is hot, add vegetables (carrots and broccoli stems first, then onions, water chestnuts, broccoli, etc.). 

  10. Add chicken, then stir.

  11. Add teriyaki or soy sauce, then stir

  12. Add steak, then stir. Add additional soy or teriyaki to taste.

  13. Serve over rice
